900 grams heirloom tomatoes, sliced
500 gram bocconcini, sliced
1/2 cup fresh basil leaves, sliced thinly
DRESSING:
1 shallot
1/4 cup (60ml) extra virgin olive oil
2 tablespoons red wine vinegar
This classic Italian salad featuring sliced fresh mozzarella, tomatoes, and sweet basil is proof that the simple things are often the best.
Make dressing: Place ingredients in a screw-top jar; season to taste. Shake well.
Arrange tomato, mozzarella and three-quarters of basil on a large serving platter. Drizzle with dressing and top with remaining basil and serve. Season with salt and pepper.
